Frittata for Two

In a previous post from Katie, she literally cleaned out her refrigerator to make a frittata. Much like Katie, if I have eggs, a frittata can be made.

On weekdays, if I have a few minutes of free time before leaving for work (I can usually attribute these minutes to not drying my bangs), I will usually make myself a mini frittata. Well, that or oatmeal...or a breakfast taco.


Frittata for Two
5 egg whites
3 eggs
2-3 handfuls arugula
1/2 cup cooked turkey sausage
1/4 cup parmesan cheese
1/8 cup fat free half & half
5 shakes of hot sauce
1 tsp garlic powder
lots of black pepper

Now you just..
Combine all ingredients in a bowl and whisk with a fork. Heat a medium sized non-stick skillet over medium heat. Coat with cooking spray. Pour mixture into skillet and let cook for a few minutes until the bottom is firm and top is still jiggly. Turn on broiler and place in oven until frittata is cooked all the way through, just a few minutes. An alternative to the broiler is to flip it with two spatulas and cook both sides in the pan.


That's it! Top with avocado and salsa.

Egg White Frittata for One
Whisk 4 egg whites, a handful of arugula (or spinach), 2 shakes hot sauce, and black pepper. Heat a small sauce pan over medium heat and cook a few minutes on each side. Top with salsa.

Enjoy with a glass of OJ
