Snack Time

Bananas, peanut butter, and chocolate.
That's all you need for pure bliss.

Now, what happens when you melt the chocolate and peanut butter together, dip your banana, and freeze it? Heaven. That's what happens.

I stumbled upon a great website (Never Home) Maker and fell in love with her Frozen Banana Bites.
Then I came across these tasty little gems again on yet another creative blog, Lookbook Cookbook. Except their banana bites were in fact... drum roll please... banana pops.

Obviously I had to make my own, and they did not turn out quite as pretty. However, peanut butter, chocolate, and bananas happen to be completely full proof ingredients. So what my banana bites are lacking in appearance, they completely make up for in flavor.

Peel 2 bananas and stick in the freezer for a few hours. When bananas are frozen, chop into 1 inch pieces. Mix 1/3 cup of chocolate chips with 1/3 cup of peanut butter in a double-boiler (or make your own by placing a bowl on top of a similar sized pot. Place 1 inch of water in the pot and ingredients in the bowl.) Warm over low heat and dip the banana pieces one by one, scooping out with a spoon. Place each "bite" on a plate covered in parchment paper, and move to the freezer. Just as a warning, a few might not even make it to the freezer!

Have I mentioned that it has been over 100° in Austin for 60+ days? It's almost required to eat something frozen daily. (That's my excuse, anyway.)

Quick Tip: When you're ready to snack, the banana reaches ice cream like consistency if you put it in the refrigerator for an hour after freezing, or set out on the counter for 10 minutes.
