Greek Pasta

It is scorching down here in Austin. We just can't seem to get temperatures under 100 degrees. However, we have some great recipes to cool us down.

This pasta recipe features some of my favorite ingredients.
You'll need:

1lb Angel hair pasta
Jar of artichoke hearts
Jar of pimentos
Jar of chopped black olives
One bunch of green onions
Cavender's Greek seasoning
Feta cheese (crumbled)

Chop the green onions while the pasta is cooking.



When pasta is al dente, strain and place in a large bowl. Add the jar of pimento, artichokes, and olives.


Mix together. Once the pasta has cooled down a bit, add the green onions, cavender's greek seasoning, and feta cheese. Season to taste.

You do not need much of the greek seasoning (especially with all the other tasty ingredients).


Cover the pasta and place it in the fridge. Let it cool for at least 30 minutes.


If you're anything like me, enjoy a glass of wine while cooking. I find it hard to cook without it. I've also adapted this recipe over the years. Feel free to subtract and add any of the ingredients as you wish. When my budget is tight, I exclude the artichokes and feta. Make it your own!
